  • 350ml Alpro Oat Drink No Sugars
  • 1 egg
  • 1 tsp vanilla extract
  • 2 tbsp caster sugar
  • Pinch salt
  • 300g self raising flour
  • 4 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 250g fresh blueberries
  • Fresh fruit and red fruit coulis, to serve

Preparation

Step 1

Make the pancake batter. Whisk together the Alpro Oat Drink No Sugars, the egg yolk, vanilla extract, sugar and salt.

Step 2

Put the flour, baking powder and bicarbonate of soda into a separate, big bowl and stir together. Pour the wet ingredients mix over the dry ingredients and whisk again until you have a lovely smooth batter.

Step 3

Use a hand beater or whisk to make the egg white fluffy and you can little soft peaks to stand up on their own. Gently fold it into your batter, so as not to let all that air out.

Step 4

Put the batter to one side and let it stand for 20 minutes. Then carefully stir in the blueberries.

Step 5

Heat a drizzle of oil in a frying pan. Pour in about 2 tablespoons of batter and cook for 1-2 mins, until the base sets and bubbles pop out all over the top. Flip and cook the other side for a minute. Repeat in batches until all your batter is used up.

Step 6

Stack them up with the fresh fruit and coulis, and watch them fly off the plate like hot... pancakes!
