Festive Biscuits with a Spiced Oat Latte
Ingredients
use gluten free flour to enjoy heavenly gluten free biscuits
- 60g Cane Sugar
- Grated zest of Lime
- Grated zest of 1 Orange
- 1 tsp Rosemary
- 1 egg
- 1 tsp Cinnamon
- Pinch of salt
- 250g Flour
- 125g low fat butter
- 4 tbsp Cinnamon
- 250ml Alpro Oat Barista
Preparation
Step 1
Make your biscuit dough. In a bowl, cream together the low fat butter and cane sugar along with a pinch of salt, the cinnamon, orange and lime zest and rosemary until it’s creamy and fluffy. Beat in the egg. Gradually add the flour in three separate batches and mix until it all comes together in a dough. Wrap it in cling film and chill in the fridge for at least an hour.
Step 2
Preheat the oven to 175°C and line a baking tray with paper. Take the dough out of the fridge, knead it and roll out to a thickness of 0.5cm. Cut into shapes, whatever you fancy, either by hand or using cookie cutters. Make patterns with a fork, decorate with a sprig of rosemary or put your biscuits on sticks. Be creative!
Step 3
Lay them out on the baking sheet and bake for about 15 minutes in the middle of the oven until the edges are golden brown, take out of the oven and cool on a wire rack.
Step 4
Now make the spiced latte. Gently heat the Alpro Oat Barista along with the cinnamon (careful not to boil it!) stirring constantly. Once warm, whisk until it turns into a frothy foam, just like it was designed to do. Spoon into 4 glasses and serve with the biscuits. You beauty!
