Frozen Vanilla Rice Cake

- 4 rice cakes
- 100g fresh raspberries
- 2 tbsp cacao nibs
- 4 tbsp Alpro Vanilla Plant based alternative to yoghurt
- 4 tbsp peanut butter
Try this with flavoured rice cakes
Ingredients
- 4 rice cakes
- 100g fresh raspberries
- 2 tbsp cacao nibs
- 4 tbsp Alpro Vanilla Plant based alternative to yoghurt
- 4 tbsp peanut butter

Preparation

Spread the rice cakes with the peanut butter. Be generous!

Sprinkle a helping of fresh raspberries over the each one and gently mash with a fork.

Top with a tablespoon of the Alpro Vanilla Plant based alternative to yoghurt, the cacao nibs and a twist of salt.

Freeze overnight. When you're ready, take out, defrost for 5 minutes and devour!
