Red Thai Freezer Soup
Get ahead of the weather, with this ready prepped winter warming Thai soup!

Ingredients
Gluten intolerant? Use gluten-free noodles.
Serves 6
- 2 large sweet potatoes (scrubbed, but no need to peel)
- 1 red onion
- 2 garlic cloves
- 5cm ginger
- 2 sweet red peppers
- 110g Thai red curry paste
- 1L Alpro Coconut drink
- 300g whole wheat noodles, cooked
- Fresh coriander
- Dried chillies, ground
- 1 lime
Preparation

Step 1
Roughly chop the sweet potato, red onion, garlic, ginger and sweet pepper. Pop the lot into a Ziplock freezer bag. (The stand-up ones designed for easy pouring are ideal.)

Step 2
Add the Thai red curry paste and Alpro Coconut drink to the veggies. Seal and freeze until you need it.

Step 3
When you're ready, just take it out of the freezer.

Step 4
Bring it to a boil and simmer till the veggies are soft, then whizz with a stick blender until you have a smooth, creamy, deliciously spicy soup. Serve and enjoy!
