Toad in the Hole
Ingredients
- 125g plain flour
- 3 eggs
- 300ml Alpro Almond Unsweetened drink
- 1/2tsp bicarbonate of soda
- Salt and pepper
- 454g (8) vegetarian sausages
- 1 tbsp vegetable oil
Preparation
Step 1
Pre heat the oven to 250ºc conventional, gas 8. Pour the oil into a 24 x 30cm ovenproof dish and heat it in the oven until the oil is spitting.
Step 2
Carefully lay the sausages in the hot oil and cook in the oven for approximately 15 minutes turning occasionally until golden brown.
Step 3
To make the batter; place the flour, eggs and Alpro Almond drink in a medium size bowl and beat with an electric whisk for 3-4 minutes. Add the bicarbonate of soda and season well.
Step 4
Remove the ovenproof dish from the oven and carefully pour the batter .around the sausages. Reduce the heat to 240ºc conventional heat, return the dish to the oven and cook for 35 minutes until ‘puffed up’, golden brown and crispy.
Step 5
Delicious served with broccoli & buttered cabbage.
