Ingredients
- 130g frozen raspberries
- 200ml Alpro Almond No Sugars drink
- 120g oat flour
- 4 tbsp maple syrup
- 1 tbsp baking powder
- Vegetable oil or plant-based alternative to butter, for cooking

Step 1
In a bowl, use a stick blender to whizz together the raspberries, Alpro almond No Sugars drink, oat flour, maple syrup and baking powder. Keep going until you have a nice, smooth batter.

Step 2
Heat a little oil or plant-based alternative to butter in a frying pan, spoon in the batter into little rounds, leaving space in between each one. (This recipe makes 20 small pancakes.) Top with a lid and cook until they're brown and puffed up.

Step 3
Meanwhile prep your toppings – banana, cacao nibs, strawberries, blueberries, Alpro plant-based alternative to yogurt, maple syrup and peanut butter. Arrange them on a serving board, leaving a space for your pancakes. Get creative!

When your pancakes are cooked, pop them onto the board and enjoy straight away!
