Vegan Apple Pancakes

Ingredients
- 3 red apples
- 200g plain flour
- 1 tbsp baking powder
- 1/2 tbsp cinnamon
- 1 tsp salt
- 2 tbsp olive oil
- Maple syrup to finish
- 300ml Alpro This is not m*lk Whole
Preparation

Step 1
Using a hand grater, finely grate two of the apples. Core and thinly slice the last one.

Step 2
Put all the dry ingredients in a bowl, using a sieve. Because nobody likes lumps! Add the Alpro This is not m*lk Whole, olive oil and grated apple. Whisk until well blended together.

Step 3
Heat a lightly oiled frying pan over a medium heat. Pour about 2 tablespoons of batter into the pan and pop an apple slice on top. Repeat until your pan is full. Cook for 1-2 minutes, until the base sets and bubbles appear all over the top. Flip the little pancakes and cook the other side for a minute. Keep cooking in batches until all the batter is gone.

Step 4
Serve warm with a generous glug of maple syrup (and extra chopped apple if you fancy).
