Alpro Protein Chocolate and Berry Pancakes

- 200g wholemeal flour or plain flour (sieved)
- 10g coconut sugar
- 350ml Alpro Soya High Protein Drink
- ½ tsp baking powder
- 1 tsp vanilla extract
- ½ banana
- 2 tbsp cacao nibs or dark chocolate grated
- 125g blueberries
- 1 tsp oil
Mash the blueberries for a saucy topping
Ingredients

- 1 tsp vanilla extract
- ½ banana
- 2 tbsp cacao nibs or dark chocolate grated
- 125g blueberries
- 1 tsp oil
Mash the blueberries for a saucy topping
Preparation

Add the flour, coconut sugar, Alpro Soya High Protein Drink, baking powder, vanilla extract and banana to a blender and whisk until smooth.

Transfer into a bowl and stir through the berries.

Heat the oil in a pan, and once heated, ladle in the mix and cook for 2-3 minutes over a medium to high heat on each side.

Repeat until all the mix is cooked.

Stack your pancakes and finish with cacao nibs or grated dark chocolate. Enjoy!
