Alpro Protein Chocolate and Berry Pancakes

This delicious recipe makes the perfect Sunday morning serve!

Ingredients

Mash the blueberries for a saucy topping

Serves 4

  • 200g wholemeal flour or plain flour (sieved)
  • 10g coconut sugar
  • 350ml Alpro Soya High Protein Drink
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ banana
  • 2 tbsp cacao nibs or dark chocolate grated
  • 125g blueberries
  • 1 tsp oil

Preparation

Step 1

Add the flour, coconut sugar, Alpro Soya High Protein Drink, baking powder, vanilla extract and banana to a blender and whisk until smooth.

Step 2

Transfer into a bowl and stir through the berries.

Step 3

Heat the oil in a pan, and once heated, ladle in the mix and cook for 2-3 minutes over a medium to high heat on each side.

Step 4

Repeat until all the mix is cooked.

Step 5

Stack your pancakes and finish with cacao nibs or grated dark chocolate. Enjoy!
