Ingredients
Use any soft fruit you like
Use gluten-free cereal bars
Serves 10
- 115g oats
- 2 tbsp of almonds
- 1 medjool date, pitted
- 1 tsp vanilla extract
- 4 tbsp Alpro Red Fruit High Protein Alternative to Yoghurt
- 60g raspberries
- 2 tsp cocoa powder
- 2 tsp chia seeds
- 35g dark chocolate
- Desiccated coconut for decorating

Step 1
Add the oats to a blender with the almonds and blitz until a flour consistency forms.

Step 2
Add the dates, vanilla extract, 4 tbsp of Alpro Red Fruit High Protein Alternative to Yoghurt, raspberries, cocoa powder, chia seeds, and blitz until a dough-like texture forms.

Step 3
Roll the mix into bite-size balls and place them in the fridge to set for 30 minutes.

Step 4
In the meantime, melt the chocolate in a bowl over simmering water on the hob. Once the balls have firmed up, drizzle the chocolate over the balls and return to the fridge for a further 30 minutes. Finish with a sprinkle of coconut. Enjoy!!
