Oat Chip Pancakes

Ingredients
Serves 3
- 225g plain flour
- 75g light brown sugar
- 1 tbsp baking powder
- Pinch salt
- 200ml Alpro Oat drink
- 100ml water
- 1 tsp vanilla extract
- 85g plant based dark chocolate chips
- Vegetable oil for frying
- Maple syrup to serve
- Kellogg's toasted oat granola to serve
- A small handful of Halved blueberries to serve
Preparation

Step 1
Mix all the dry ingredients aside from the chocolate chips in a large bowl. Whisk in the Alpro Oat drink, water, and vanilla until you get a smooth batter, then add in the chocolate.

Step 2
Using A dry non-stick frying pan on a medium heat add enough of the mixture into the pan to make an American style pancake and leave to cook.

Step 3
When bubbles start to form on the top and the edges are cooked, flip your pancake with a spatula and cook until both sides are golden brown.

Step 4
Repeat this process until all the pancake batter has been used up. You can keep your pancakes in a warm oven whilst you cook the rest.

Step 5
Drizzle over maple syrup, blueberries, and a sprinkle of granola to serve up.
